Add the tomatoes and cook until they begin to break down, about 10 minutes. 3. Add the bread pieces, vegetable broth, salt, and pepper. Panzanella
Ingredients:
- 1 pound day-old bread, torn into pieces
- 1 pound ripe tomatoes, chopped
- 1 cucumber, chopped
- 1 red onion, thinly sliced
- 1/2 cup basil leaves, torn
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions:
1. Combine the bread pieces, tomatoes, cucumber, red onion, and basil in a large bowl. 2. Whisk together the olive oil, red wine vinegar, salt, and pepper in a small bowl. 3.
