  • 1 (15-ounce) can of cannellini beans, rinsed and drained
  • 1 (15-ounce) can of diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic and cook until softened, about 5 minutes. 2. Add the bread cubes, beans, tomatoes, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for at least 2 hours, or up to overnight. 3. Serve hot, with grated Parmesan cheese if desired.

Pappa al Pomodoro

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ripe tomatoes, chopped
  • 1 pound day-old bread, torn into pieces
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. 2. Add the tomatoes and cook until they begin to break down, about 10 minutes. 3. Add the bread pieces, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the bread is softened and the soup has thickened. 4. Serve hot, with grated Parmesan cheese if desired.

Panzanella

Ingredients:

  • 1 pound day-old bread, torn into pieces
  • 1 pound ripe tomatoes, chopped
  • 1 cucumber, chopped
  • 1 red onion, thinly sliced
  • 1/2 cup basil leaves, torn
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions:

1. Combine the bread pieces, tomatoes, cucumber, red onion, and basil in a large bowl. 2. Whisk together the olive oil, red wine vinegar, salt, and pepper in a small bowl. 3. Pour the vinaigrette over the salad and toss to combine. 4. Serve immediately, or let the salad marinate for at least 30 minutes before serving.
